Garlic Cheddar Spoonbread

If you have never heard of Spoonbread, there is a good chance you didn’t grow up running barefoot with a RC Cola and a Moon Pie.  It is a Southern dish that just doesn’t make it very far past the Mississippi line.

Southern Spoonbread

Spoonbread is cornmeal-based dish that has the consistency of a souffle.  It is light, fluffy, and melts in your mouth.  It has a slightly custardy center and a crisp top.  A true Southern cook will also cover that sucker in cheese!  Eat it with a fork or, wait for it…… a spoon!  Sir Streusel ate it for days, until the last bite was gone.  He ate it for dinner, for breakfast, for an afternoon snack.  He just, well he just ate it!  And that is what makes me a happy girl! :)

Ingredients:

The Cast

1 cup yellow cornmeal

½ tsp salt

¼ tsp garlic powder

2 cup chicken stock

2 Tbs melted butter

2 cups heavy cream

3 eggs—lightly beaten

2 cups cheddar cheese—grated, divided

Directions:

Preheat oven to 375 degrees.

Lightly grease a 2 quart baking dish with nonstick cooking spray.

In a medium bowl, combine cornmeal, salt, and garlic powder. I love cornmeal. Cornmeal rocks my world. Just sayin'

In a small saucepan, bring chicken broth to a boil over medium-high heat; gradually add the boiling chicken broth to cornmeal mixture, whisking constantly until smooth.

Stir in melted butter.

Add cream, baking powder, eggs, and 1 ½ cup cheese to cornmeal mixture.

Pour batter into prepared baking dish.

Bake for 30 minutes or until a knife inserted in the center comes out clean. Edna was digging the spoonbread, I could tell she was smiling!

Right out of the oven! Southern Souffle!

This is where I show the genius I really am, I sprinkle the top with cheese. I like to add that creamy touch. Shoot, who am I kidding, I just love cheese!

Garlic Cheddar Spoonbread. Creamy, little custardy in the middle, crispy top, covered in cheese. Nothing else needs to be said.

Spoonbread.....good stuff.

Try it.  Chances are, no one has ever heard of it.  They will love you for it.  They will beg for seconds.  They will put a crown on your head and proclaim you “Queen of all things wonderful” !!!!
