Buttermilk Biscuit bites with Feta and Sun-Dried Tomatoes

I love biscuits, doesn’t everyone? When I saw this recipe with two of my favorites, feta and sun-dried tomatoes, I knew I would be happy if I baked them.  They truly are little bites of bliss.  Sir Streusel wasn’t too sure about the feta in his biscuit, but as usual, there was none left.  I don’t know that I have ever had a lighter biscuit.  The sun-dried tomato just gives it that little punch to make it a winner.  Let’s get started!

Ingredients:

The Cast

1 cup all-purpose flour

1 tsp baking powder

1/8 tsp baking soda

1/2 tsp salt

1/2 cup feta cheese

1/2 tsp dried oregano

1 Tbs chopped sun-dried tomatoes

1/2 stick unsalted butter–frozen solid

1/2 cup buttermilk

Directions:

Preheat oven to 450 degrees.  Line a baking sheet with parchment paper or spray with cooking spray.

In a medium bowl, mix: flour, baking powder, baking soda, salt, feta, and oregano with a fork

Chop Sun-dried tomatoes.

With a fork, mix tomatoes into buttermilk.

Grate frozen butter into the dry ingredients and mix quickly with fingertips to blend evenly.

Continuing with the fork, mix buttermilk mixture into dry ingredients until dough just comes together. Add a little more buttermilk if necessary.

Pinch dough into rounds and place on baking sheet. Bake for 10 to 12 minutes until golden brown.

These little bites of bliss are heavenly.  Watch out though, you will eat 7 or 8 before you realize it, buy hey, they’re tiny right?
